Adam Steely 2Wine expert and enthusiast, eternal optimist, successful restaurateur, comic book fanatic, foodie, networked to the hilt, super dad and husband, and all-around good guy.

Adam has been actively involved with award-winning wine programs since the early 1980’s. He opened his own wine retail shop at age 22, and spent ten years directing wine programs for luxury resorts. In 1990, Adam met Chef Jimmy Sneed and moved to the rural town of Urbanna, Virginia to manage the restaurant Windows on Urbanna Creek. Winning national recognition for the 100 percent domestic and largely local wine list at that property, Adam went on to open The Frog and Redneck with Chef Sneed in Richmond’s historic Shockoe Slip area. Continuing to win national awards for the wine program, now a fully international selection, Adam was additionally responsible for the hiring and training of the service staff as well as working on successful radio, television and print marketing campaigns.

In 2000, Adam took over the restaurant management operations for Ford’s Colony, where The Dining Room, under the guidance of Chef David Everett, earned AAA’s Five Diamond rating continuously for a decade. While at Ford’s Colony, Adam was invited to Monterey, CA where he was presented with an award from the National Restaurant Association for creating the best private club wine list in the United States.

Adam left Ford’s Colony in 2004 to open Blue Talon Bistro with Chef Everett. Along the way, he consulted on the staffing and beverage programs at Tristan Restaurant in Charleston, SC, Sugar Toad Restaurant in Naperville, IL, The Trellis Restaurant in Williamsburg and, most recently with Chef Jimmy Sneed at his new restaurant BlowToad in Richmond’s Carytown.

Adam has served as a judge for the statewide Virginia Wine Competition put on by the State Fair since its inception. He has also been happy to sit on a tasting panel with other industry figures for an annual competition hosted by Virginia Wine Lover’s Magazine. Adam lives with his wife and daughter in Williamsburg, VA, where his restaurant has been recognized in the top 10 in the region since opening in 2004.
